stuffed peppers

In Romanian: Ardei Umpluti

Ingredients:
• 10-15 bell peppers
• 1-1.5dl oil
• 2 onions (finely chopped)
• 150g rice
• 1 egg
• 700g mixed ground meat
• salt and pepper
• ground paprika
• chopped tomato/thick tomato sauce
• 3 teaspoons dried parsley

Directions:
Preheat the oven to 190°C.

First prepare the peppers. Using a sharp paring knife carefully cut a lid out of the top of each pepper around the stalk. Trim out any white parts remaining and remove any seeds.

Heat a large frying pan over a medium heat and add 2 tablespoons of oil. Add the onions and stir. Cook for about 5 minutes until pale and translucent, but not brown.

Add the rice, mince meat, the egg, salt, herbs and the ground paprika.

Stuff the emptied peppers with the mixture and replace their tops. Place in a baking tray and add the tomato sauce.

Cook them in the oven for about 30-35 minutes until soft and cooked through.

mamaliga

Romania's version of polenta, made from yellow maize flour, it is better known to the rest of the world in its Italian form – polenta. Historically a peasant food, often used as a substitute for bread (made thick enough to slice), it evolved to be served in finest restaurants. Mămăliga is a fat-free, cholesterol-free, high-fiber food. It can be used as a healthy alternative to more refined carbohydrates such as white bread, pasta or hulled rice.

Delicious on crust bread or even as a topping on rice for a quickie vegetarian meal. It is also excellent as a sandwich spread. This recipe is for a large batch intended for canning. You can cut it back if you want a smaller batch for immediate consumption.
